“FROM THE PAST TO PRESENT DAYS”

The first bar in Torri del Benaco has given name to Osteria Centrale.
It stood in the historical centre just e few steps from the present site of Osteria Centrale.
To-day several wall photos in Osteria Centrale illustrate everyday life in Torri del Benaco from the time of this first bar and up to our days.

It was here, more than 60 years ago, “la nonna”, Antonietta Galvani, created a “cucina casalinga”, which the following generations of the Galvani family since then have been building upon.

A cuisine which gives priority to the simple and genuine tastes of food when preparing fish-and meat dishes as well as vegetarian dishes, pizzas, and home-made paste, sweets and pastry.

Osteria Centrale was totally restored in 2004, and to-day it stands as a first-class modern osteria with inviting accomodations with air-conditioning and a dining-terrace.

The cuisine, however, still gives credit to the effort and ideas of “la nonna”, Antonietta Galvani.

  TODAY'S RECIPE
THIN TALETELLERS IN LAKE FISH SAUCE

INGREDIENTS:

For 4 people

- 4 ounces of Tagliolini (egg noodles)
- Pound of fresh-water fish fillets (whitefish, trout, perch)
- 5 red tomatoes
- 1 carrot
- 1 rib of celery
- 1 onion
- 1 clove garlic
- 1 sprig of parsley
- 2 bay leaves
- ½ cup dry white wine
- Extra virgin olive oil
- Salt
PREPARATION:

Prepare the fish fillets, removing all bones and skin. Cut into pieces regularly and keep aside. Wash the tomatoes and cut them in half, removing the inner part. Let them drain on their water and cut into cubes. Cut into small pieces the carrot, celery and onion and put it into a pan with oil and a clove of garlic. Fry together the bay leaves.

Add the pieces of fish, salt and cook for five minutes on high flame. Add the wine and let it soften for several minutes. Add the tomatoes and the chopped parsley. Cook for two minutes and put out the fire. Meanwhile cook the noodles in salted water. Drain and toss for a few minutes in the pan with the sauce on fish. Serve pasta sprinkled with the remaining chopped parsley and seasoned with a touch of extra virgin olive oil.
